Pope Fitness: Fixate Creamy Chicken Salad

Fixate… So many yummy recipes, so little time.

Seriously, there are some delicious recipes in this cookbook!! Who would have thought that eating healthy could be so tasty. I know lots of people need easy recipes to prep ahead of time. This one is perfect! You can put it over some lettuce for a salad, in a tortilla for a wrap or just eat it alone and is perfect for a quick lunch through the week.

Creamy Chicken Salad

3 cups chopped rotisserie chicken breast, boneless, skinless

1/2 cup chopped green apple

1/2 cup red seedless grapes, cut in half

1/3 cup sliced almonds

2 green onions, sliced

2 tbsp chopped fresh tarragon

1/4 cup honey mustard dressing (recipe below)

Combine all ingredients in a large bowl, mix well and refrigerate for 2 hours.

Serving size: 1 1/4 cup

Containers (with 2 cups romaine lettuce): 1 green, 1/2 purple, 1 red, 1/2 blue, 1/2 orange (add 1 1/2 yellow if using an 8″ tortilla for a wrap)

Honey Mustard Dressing

1/2 cup reduced fat (2%) plain Greek yogurt

3 tbsp Dijon mustard, gluten free

3 tbsp raw honey

3 tbsp rice vinegar

1/4 cup EVOO

Combine yogurt, mustard, honey and vinegar in a medium bowl and mix well. Slowly add oil, whisking constantly until well blended; season with sea salt if desired. (I don’t think it needs it!)

Containers: 1 orange (if used alone, this is already included in the container count above for the chicken salad recipe)

I substituted pecans for the almonds because I forgot to buy sliced almonds and omitted the onion because I don’t like them. Delicious!!
