Ok, so this was pretty awesome. I was worried it wouldn’t taste like shrimp fried rice, but it was actually pretty delicious!! The preparation was a team effort between my mother in law and myself. Honestly, she had the harder part. She took everything and chopped and all I had to do was throw everything in the pan and cook!
Shrimp Fried Cauliflower Rice Bowl
30 cooked shrimp
1/2 tsp sea salt
1/4 tsp pepper
2 tbsp olive oil, divided
3 eggs, beaten
1 tbsp minced garlic
1 tsp onion powder
3/4 cup carrots
3/4 cup peas
1 head of cauliflower
2 tbsp soy sauce
1/2 tsp sesame oil
Prep: Use food processor to lightly dice cauliflower and carrots separately.
Heat 1 tbsp olive oil in large pan or Wok. Cook beaten eggs and set aside in a bowl. Place in remaining olive oil and add in the remaining ingredients except soy sauce and sesame oil. Cook for 5-7 minutes until vegetables are soft. Mix in scrambled eggs. Add in soy sauce and sesame oil. Let cook for an additional 2-3 minutes.
Serve warm and enjoy!!
Note: If you are following the Whole 30, you are going to want to swap out the soy sauce or omit completely.
