Generally, I like to stick to a lower carb diet. I limit myself to 2 servings per day. However, I also really love carbs. They are my absolute favorite! So it would be unrealistic to think that I would not have days when I splurge. I love to make pancakes on Sundays for my family. And while I only splurge once in a while, I like to clean things up as best as possible so I can enjoy without totally blowing my diet. These are a favorite in our house! Especially when I add the chocolate chips 🙂
Whole Wheat Pancakes
First, make the dry pancake mix (can be stored in the pantry between uses!)
- 4 cups whole wheat flour
- 2 tsp baking soda
- 1 tsp salt
- 3 tbsp sugar
To make pancakes (this makes approximately 5 pancakes):
- 1 cup of dry pancake mix (above)
- 1 egg
- 1 cup milk
- 1 tbsp olive oil
Preheat griddle or pan and spray with non-stick spray. Blend dry pancake mix, egg, milk and oil in a bowl. Pour batter onto pan/griddle. Cook until bubbles on the top of the pancakes have popped. Flip and cook until other side is golden brown. If desired, add 1/2 cup chocolate chips or fruit to the batter before cooking to add your own flair to them!
If you love blueberries, you can add 1/4 cup of blueberries and 1/4 cup of syrup in a microwave safe container and microwave for 30 seconds. Stir and pour your homemade blueberry syrup on top of the pancakes! Yum!
