Picnic season is right around the corner and there is nothing easier than deviled eggs to take to a pot luck! Typically, they are made with mayo. Not so healthy. Greek yogurt is an awesome swap for this recipe that adds in a punch of protein, makes it healthier and still maintains the delicious flavor! Happy picnicking!
Yummy Greek Yogurt Deviled Eggs
12 hard boiled eggs, peeled and cut in half lengthwise
1/2 cup Greek yogurt
1tbsp Dijon mustard
Pinch himalayan salt
1 tsp dill
1 tsp onion powder
Remove yolks from eggs keeping the whites whole and set aside. Put yolks, Greek yogurt, mustard and spices in a bowl and mix in a food processor until smooth. Place whites on a plate, hole facing up. Scoop mixture into center of egg. Sprinkle top with paprika or more dill if desired.
You can also use this same recipe to make egg salad. Just add 2 tbsp more Greek yogurt and include whites in food processor. Scoop onto Ezekiel toast or endives!
