It’s no secret that I love any and everything about Mexican food. The workout program I am currently doing slowly ramps up with intensity and nutrition. The third week of the program is a no carb week 😳
I love me some carbs, so I thought this would be really difficult. It actually wasn’t as bad as I thought! But I still crave some “carb-y” side dishes! I tossed this together today and it turned out delicious! I knew I’d be asked for the recipe, so I just beat you to the punch 👊
Mexican Cauliflower Rice
1 1/2 cup cauliflower rice (I used one freezer steam bag)
1 cup diced tomatoes
1 cup black beans
1 tsp garlic powder
1 tsp onion powder
1 tsp cumin
1/2 tsp chili powder
If using steamer bag, cook cauliflower rice first. Spray pan with non-stick spray. Mix all ingredients in a pan and sauté together for 7 minutes until bubbling. Serve while hot!
