5 Days of Clean Crock Pot Meals

I gave myself a little challenge last week and I am happy to say it was a success (mostly)! I wanted to try some new recipes, but the one thing that always holds me back from doing that is the time it takes to prepare these new recipes. I am a creature of habit and know how long each meal takes so I know which days I can make certain meals. However, with a crock pot, it is just prep and set! Plus, with the weather turning cooler, a nice warm dinner is exactly what is needed!

So here are the five meals I chose (all found on Pinterest, by the way!):

Crock pot Asian Short Ribs

These were awesome and very similar in taste to the Crock pot Chicken Teriyaki I posted about before. My picky hubby approved as well. I just served it over brown rice and with some steamed broccoli and BOOM. Done!

Crock pot Chicken Tacos

These were my favorite of the week. Super easy to make and there were plenty for leftovers for lunches!! I think I could eat some form of tacos every day of the week! Love them!!!

Crock pot Honey Pork and Apples

Ok, so I wouldn’t say that I disliked this one. The problem is that my crock pot sucks. Any time I put something in before I leave for work and it has to cook all day, it burns around the edges and gets dried out. That’s exactly what happened with this one. It was way overdone for me and the apples had all but disintegrated. Boo. I could tell the flavor was pretty good though and will have to try it again when I am home and can start it later in the day or turn it off earlier.

Rustic Chicken Slow Cooker Stew

This one was also a hit! What I loved the most about this one was that everything for the entire meal was in the crock pot. Nothing else needed to be made after the fact. That’s a win for me! Joey said it was his favorite of the week too! Picky eater win!

Crock pot Honey Garlic Chicken and Veggies

This one was different. It was a bit sweet for me, but I also ran out of soy sauce and only had 1/4 of a cup instead of the full cup that was listed in the recipe. I am almost positive that was the reason. Again, the hubby liked it and I saw him eating the leftovers yesterday, so he must have been telling the truth 🙂 But again, I loved that everything was in the crock pot and no sides were needed! I’ll give this one another shot when I have the right amount of soy sauce before ruling it out! I also used boneless skinless chicken breast in this one rather than the skin on thighs.

So there you have it! Five days of crock pot meals done!! Healthy and clean 🙂
