Pope Fitness: Avocado Chipotle Dressing (21 Day Fix Approved!!)

I don’t know about you, but I am always looking for 21 Day Fix approved salad dressings. I like plain old oil & vinegar. However, sometimes I just need a nice creamy dressing to curb the cravings. 

I recently started 22 Minute Hard Corps and am really enjoying the workouts. Of course, I had to check out some of the recipes to see if any could make the cut for the recipe book. This one sounded amazing – and it is!! Oh, and since 22MHC uses the container system, it’s also Fix approved. Perfecto!!

 

Avocado Chipotle Dressing 

1/4 cup water

5 tbsp EVOO

3 tbsp fresh lemon juice

1 medium avocado, cut into chunks

1 canned chipotle chile in adobo sauce with 2 tsp adobo sauce

1 clove of garlic, coursely chopped

1 tsp Himalayan sea salt

Place ingredients in blender and blend until smooth. Counts as 1 orange.
