Pope Fitness: Super Simple Curry Zoodles

I have been dying to try out the Veggetti and finally did it today! I am super excited about the result. I absolutely love curry and wanted a great alternative to noodles. This was the perfect combo! The whole process probably took about 15 minutes and is an awesome side dish or main course. 

Super Simple Curry Zoodles

2 small zucchini, turned Zoodles with Veggetti or spiralizer

1 tbsp EVOO

1/2 tsp Himalayan sea salt

1/2 tsp ground black pepper

2 tsp curry powder

Put EVOO into pan and heat slightly. Add Zoodles and toss to coat evenly with EVOO. Add in remaining spices. Sauté for approximately 7 minutes until Zoodles are tender. Let cool to desired temp and enjoy!

You can add shrimp, chicken or tofu if desired. I would brown chicken before adding into mixture. Although, shrimp or tofu would cook well right in the Zoodles mixture! 

I also had some leftover julienned sweet potatoes from the Veggie Strata I posted about the other day and tossed them in with this same oil and spice mixture. Delicious!!
