Pope Fitness: Cowboy Twice Baked Potatoes

Soo… I had this idea once. I wanted to do a cooking show on YouTube where I got together with friends and made food while drinking. Well, I decided to roll out my first episode right before the launch of Country Heat. Why am I just posting this now then?

Yeah, that’s a great question.

I’ll be totally honest. I did the editing, wasn’t in love with it and left it on my phone for a really long time. I didn’t even want to share it. But you know what? I decided to do it because I want you to watch me grow. I promise that each and every episode is going to be better and better and in a year or two I will be able to look back at this fondly, laugh at myself and realize how far I’ve come.

That’s not to say that these twice baked potatoes didn’t come out fantastic. Because they totally did. They are really good! I promise it wasn’t just the wine talking.

Cowboy Twice Baked Potatoes Recipe

4 potatoes – baked at 375 for 1 hour

8 slices turkey bacon – cooked and crumbled – if doing in the oven, bake for 15 minutes at 400

2 blue containers of cheese of your choosing, shredded

Ranch Seasoning (1 tsp onion powder, 1 tsp garlic powder, 1 tsp sea salt, 1/2 tsp pepper, 1/2 tsp parsley, 1/2 tsp dill)

1.5 cups Greek yogurt (after trying them, the potatoes were a little dry so I upped this a bit here)

Containers: 1/2 blue, 1/2 red and 1 yellow
