Pope Fitness: Homemade Honey Almond Granola

I don’t know about you, but the summer has been ROUGH on me!! Too many splurges and treats for sure. I am declaring October “Stop the Muffin Top” month and am getting a head start. If I have to endure the cooler fall weather and the impending winter, I need to be able to wear my cute skinny jeans – without spilling over the top of them! I am pretty sure that I am not going to fit comfortably, so I need to get rolling and back on track immediately! I thought back to when I was my fittest and what I was eating then and based my meal plan on that. One of my favorite snacks was plain Greek yogurt, fresh fruit and granola. In an attempt to clean up my diet a bit, I decided to attempt making homemade granola. At least then I know exactly what is in it! Let me just say “YUM!!!” This recipe turned out amazing and I knew I had to share it right away. I hope you enjoy!

For you Fixers, it is 1 yellow container and portion it using that container as well. Although, I could probably sit and eat this entire batch in one sitting…


Homemade Honey Almond Granola

Preheat oven to 350.

Dry Ingredients

3 cups rolled oats

1/3 cup brown sugar

1/2 tsp salt

1 cup almonds

Place almonds in blender/food processor and chop into small chunks. Dump into bowl with remaining dry ingredients.

Wet Ingredients

1/3 cup honey

1/2 tsp almond extract

3 tbsp coconut oil

Place honey and oil in microwaveable bowl and heat for 30 seconds. Add almond extract and stir until blended. Pour on dry ingredient mixture and toss until coated. Cover cookie sheet with foil and spray with non-stick spray. Place mixture on and spread out into thin layer. Bake for 10 minutes, stir and spread out into thin layer again. Bake another 10 minutes. Let cool completely. Once it is cool, you can break it apart into bite sized chunks or crumble. Store in air-tight container. If you are like me, I portion them out right away into snack sized baggies so I can grab and go later.
