Ok. Seriously. I have this (un)healthy obsession with tacos. It doesn’t matter what form they are in, I will eat them. One of my guilty pleasures is Taco Bell. I know they are crap tacos, but I love them for some unknown reason. I keep seeing the commercials for the rolled chicken tacos and my mouth waters every time. I imagine them being delicious, while I know they are probably super greasy and tasteless like their quesadillas. Probably the perfect hangover food, but I digress…
So I thought I would give them a try at home and you know what? They weren’t half bad. Actually, they were delicious and I wished I had a bigger stomach to eat more. I used pork because I had a 4 pound pork roast I needed to cook. I used half for this recipe and the other half for another recipe. The first half of this recipe is a crockpot recipe and then you just finish it up in a pan before serving.
Rolled Pork Tacos
2 pound pork loin
2 tbsp olive oil, ghee, or butter (I used ghee. It’s my new favorite cooking fat!)
2 tsp sea salt
1 tsp black pepper
1 tsp onion powder
1 tsp garlic powder
3/4 tsp chili powder
Place all ingredients in crockpot and cook on low for 6-8 hours. Break apart with fork until shredded. Let cook an additional 30 minutes to let juices and flavors soak into the meat.
Additional ingredients needed: 2 tbsp olive oil, ghee or butter, cheese and tortilla wraps
Melt an additional 2 tbsp of olive oil, ghee or butter in a pan until you start to hear popping noises. Then you will know it is hot enough to “fry” the tortilla. Place some shredded provolone or other cheese of your choice in a tortilla wrap. I use larger soft taco sized whole wheat tortillas, but anything will work. I think the next time I make them, I will use the small 6″ tortilla shells instead. Place a small(ish) amount of pork in the wrap and roll tightly. Place open side down in the pan. Let cook until golden brown and roll until the entire thing is golden. Let this puppy cool before you take a chomp. You WILL burn your mouth… at least a friend said so…
The toughest part of this recipe is not eating 5 million of them at one time. You can have dipping sauces of your choice if you choose, but the recipe is delicious without it. You can even eat the pulled pork over rice, a sweet potato or on it’s own if you are not a fan of the rolled taco option.
