Pope Fitness: Ultimate Reset Baked Salmon

This dish was so amazing that I have to share. I actually made it last night and I am done with the Reset!

I have a really hard time with salmon. It always ends up overcooked. Or bland.

This recipe was delicious though! And the overcooked, well, that’s just a matter of learning how to actually cook it. User malfunction…

So here you go, the best salmon recipe ever!

Ultimate Reset Baked Salmon

(makes 1 serving)

1 clove garlic, chopped

2 tsp EVOO

1 tbsp chopped fresh basil

1/4 tsp Himalayan salt

1/2 tsp herbal seasoning blend

1 tbsp fresh lemon juice

1 tbsp fresh chopped parsley

1 – 6 oz salmon filet (with skin off)

Blend all ingredients, besides salmon, in a bowl. Place the salmon in a shallow dish and pour marinade over salmon. Marinate for 20 minutes turning once to get seasoning on both sides. Pre-heat oven to 350. Place salmon on aluminum foil cover with marinade and seal aluminum foil in a packet around salmon. Place on baking sheet and bake 20 minutes or until salmon flakes easily when tested with a fork.

*I actually cooked mine in a pan on the stove once as well. It turned out just as delicious. It was easier for me to judge when it was done cooking since the filet was thinner than I normally like.
