A friend dropped off the largest zucchini I've ever seen. Considering no one in my house eats it except for me, I was like 😳
I had to get creative. I'd seen a recipe on Pinterest that looked yummy, but if you know me, I always make things up when I cook. So I used that and tweaked it. It turned out amazing and I ate waaaaay too many while I was cooking them. The only thing I would do next time is cook them a bit slower because mine got a little dark. Still delicious, but a bit dark on the outside. Here you go…
Zucchini Fritters
2 cups zucchini, shredded and squeezed
1 cup Panko bread crumbs
1 tbsp Parmesan cheese
1 egg
1/2 tsp onion salt
1/2 tsp pepper
1/2 tsp garlic pepper

Once I was done shredding, I squeezed all of the excess water out and placed it in a bowl. Then I added all of the other ingredients except the olive oil. That's used for cooking 😊
Mix well with your hands and make patties that are palm-sized. Mine made about 8 patties. Heat olive oil in a pan on the stove (you could also bake them, but I haven't done that yet). Place patties in oil and cook until browned on one side. Flip and cook until browned on the other side. Let cool slightly and enjoy!
Mine were delicious plain. However, you could use marinara sauce, applesauce or Greek yogurt (as a sour cream substitute) as a topper.
