Ummm… Yes. This turned out amazing. I am in love with it and am super excited that I made a huge batch to have for breakfast every morning this week. It was super simple and delicious!
Chicken Sausage Hash
1 medium yellow onion, diced
4-5 cremini mushrooms, sliced
1 pound ground chicken
4-5 cups diced potatoes
2 tbsp cooking fat
1 tsp thyme
2 tsp garlic powder
2 tsp salt (I used Himalayan salt)
1 tsp pepper
Heat 1 tbsp cooking fat in pan. Add ground chicken, 1 tsp thyme, 1 tsp of garlic powder, 1 tsp salt and 1/2 tsp pepper. Cook until ground chicken is browned, stirring frequently. Remove and set aside. Heat 1 tbsp cooking fat in pan. Add diced onion and mushrooms. Cook until onion is slightly translucent. Add potatoes and remaining garlic powder, salt and pepper. Cook until soft. Combine potatoes and chicken “sausage” mixture and cook on low, mixing well.
To top it off, I fried up 2 eggs over easy (dippy for my fellow Pittsburghers) and popped them right on top. The broken yolk made the hash sooooooo good! You can eat this alone or along with another style of eggs. Enjoy!
