Crockpot Buffalo Chicken Lettuce Wraps

While I do love to cook, I rarely find that I have the time to spend in the kitchen cooking. I’m pretty sure most moms out there can commiserate. I want something I can make a lot of and have for a few meals. I am definitely a spicy food person. I love super easy recipes even more. And if they are healthy? Well, it’s like a match made in heaven. So here you go, a super easy, spicy option for you!

Crockpot Buffalo Chicken Lettuce Wraps

3 1/2 pounds of boneless, skinless chicken breast

1/2 tbsp garlic powder or 2 tbsp minced garlic

1 small onion minced or 1/2 tbsp onion powder

14 ounces low sodium chicken broth

1/4 cup Frank’s Red Hot (or any other hot sauce you like!)

Lettuce (for wraps)

Shredded cheddar cheese (optional)

 

Place liner in crockpot or spray with non-stick spray. Cook on low for 5-6 hours. Remove all but 1/2 cup of the broth. Cook for an additional 30 minutes. Place chicken mixture in lettuce and sprinkle with cheese and enjoy! You can also use this as a salad topper or in a tortilla wrap.
