There is nothing better than a warm bowl of soup to help keep you going through a long, cold day. I love creamy soups, but they aren’t always the healthiest. A few small swaps made this recipe much healthier!!
Clean and Healthy Crockpot Ham and Potato Soup
2 cups low sodium ham, cubed
1 large carrot, sliced
1 small onion or 1 tbsp onion powder (my hubby hates onions)
7 cups potatoes, cubed
2 tsp parsley
1 tsp thyme
5 cups low sodium chicken broth
1 cup skim milk
1/2 cup non-fat, plain Greek yogurt
Place liner in crockpot or spray with non-stick spray. Put in all ingredients, reserving milk and yogurt. Cook on low for 6 hours. Stir and mash a few potatoes to make broth a bit thicker. Add in milk and yogurt and cook for an additional 20 minutes. Enjoy!!
