Pope Fitness: Homemade Almond Milk Coffee Creamer

Well… I’ve finally had to do it. I found an amazing almond milk coffee creamer that didn’t look like it was curdling in the hot coffee and tasted amazing – and now I cannot find it anywhere.

Oy…

So I experimented this morning when I realized I was completely out and came up with a pretty awesome mix that I will be using from now on! I had to share because, well, that’s what I do. So without further ado…

Homemade Almond Milk Coffee Creamer 

1 cup unsweetened almond milk

1 T honey (you can use more or less depending on how sweet you like your creamer)

1 t almond extract

1 t vanilla extract

cinnamon to taste

In a small saucepan, combine all ingredients, stirring frequently until almost boiling. Remove from heat, let cool and transfer to air tight container. Store in the refrigerator for up to 7 days.

*For those of you following the Portion Fix meal plan, this is a teaspoon!
