Easy, Clean Eating Muffins

Do you know the Muffin Man? 

I really love these muffins. They are super easy to make, are clean and healthy and are versatile! The base of this muffin recipe is simple and most of you will have the ingredients on hand anyway. What I love is that you can add in any toppings you want – fruit, chocolate chips, raisins, whatever! This time, I added strawberries because I decided to make them last minute and that’s what I had on hand. Enjoy!

1 1/4 cup whole wheat flour

1/2 cup quick oats

2 tsp baking soda

1/4 tsp salt

1 egg

1 tsp olive oil

1/2 cup unsweetened applesauce

3/4 cup milk

1/4 cup honey

Topping of your choice

Mix everything together in a bowl. Spray muffin pan with non-stick spray, olive oil or use muffin papers. Fill with batter. Bake 10 minutes, then cover with foil and bake another 8 minutes. Remove, cool and enjoy!
