Move over Girl Scouts! I have a healthy version of your cookies to share! Super easy and delicious. Perfect for that after dinner sweet tooth and ZERO guilt! Honestly, anything I can use to keep those cravings at bay are awesome in my book. I just want to have my cake and eat it too!
Healthy Mint Chocolate Cookies
1 scoop chocolate Shakeology
1 T organic coconut oil (if not liquid, pop in the microwave for 10 seconds and stir)
1/4 t peppermint extract
Mix all ingredients together in a small bowl. Place in mini muffin tin. Push down with finger to form into tin. Place into the freezer for 30 minutes. Pop out of muffin tin and store in air tight container or bag. Recipe makes 6 cookies. *If you are following the Portion Fix meal plan, 3 cookies equals 1/2 red and 1 t.
